Story: Kibingo is a unique and outstanding coffee that originates from Kibingo Washing Station in Burundi. Grown by over 3,600 smallholder farmers who form the Kibingo cooperative, every step of the process, from handpicking the cherries to precise processing, is taken with utmost care and expertise.
The coffee is grown at an altitude of over 1,800 meters, which gives it a distinct acidity and brightness that is unmatched by any other. When the cherry is sorted, it is pulped within 6 hours of delivery and separated into high- and low-grade by density on a Mackinon 3-disc pulper outfitted with an additional separation disk. The coffee is then placed in epoxy-coated concrete fermentation tanks, where Oro yeast purchased from the French company Lalcafe is added. The tanks are left to ferment for approximately 96 hours in this environment.
LALCAFÉ ORO™ yeast (Saccharomyces cerevisiae) was specially developed for coffee production over a four-year period of research and trials. Trials in various regions and environments showed that Oro is well-suited to better control the wet process’ efficiency and to upgrade the cup quality. Oro’s ability to flourish even at low temperatures means it is equally suited for use across most altitudes. Coffee nerds eat your hearts out!
