Coffee Story: Finca Las Mercedes was founded in 1886 and has been owned by five generations of the Ortiz family. In 1976 it was passed to Mr Roberto Ortiz and family who continue to run the farm up to this day.
Located in Santiago de Maria, Usulutan on the side of the dormant volcano “El Tigre”. The rich, volcanic soil combined with high altitude provide ideal coffee growing conditions. The farm has won many accolades including the Cup of Excellence in 2006 and 2009.
This honey processed lot was harvested at 1,280m. Following harvest the coffee cherries were pulped, leaving the sticky mucilage on and dried for 4 days on clay patios before being moved to raised beds where they undergo a 21 day drying process that brings increased complexity and sweetness.
