Coffee Story: Hailing from the tiny farm Cafundó in Piatã, in Bahia’s Chapada Diamantina region, these beans from humble beginnings come packed with big flavour. Cafundo was founded in 1989 by Pedro Santana, who left the bustling city of Sao Paulo to find a farm on which to pursue a slower and simpler lifestyle with his family. This translates to extra time and care going into your cup.
Chapada Diamantina – “Diamond Plateau” in Portuguese – is a treasure trove of specialty coffee farming blessed with perfect growing conditions: high altitudes, rich soil and ideal temperatures. The coffee plants at Cafundo flourish in this environment as they nestle under the shade of local Gravellia trees. The beans mature slowly, allowing sugar concentration to develop and resulting in a very sweet and complex cup. You can expect great balance and body, with notes of stewed plum, rich caramel and toasted almond. Elegant and vibrant.
Produced with the “pulped natural” method, these coffee cherries have skin removed before processing, allowing the bean to dry with its sticky fruity pulp still attached. This delicate process preserves the complex tasting notes of the cup whilst also highlighting and developing sweetness. The results speak for themselves: this coffee is a superstar and will turn heads when brewed for filter or espresso.
