Coffee Story: A washed processed coffee from the small village of Manama, Timor-Leste. This lot was produced by a collective of 65 small scale farmers known as Manama Farms. These farmers were selected for their dedication to delivering high quality coffee through modern farming techniques, advanced sorting systems and careful attention to detail and quality. The Manama plots range from 0.5-1 hectare each and are located throughout the dense forest of the Ramelau Mountain. Coffee plants grown in this region thrive off mineral-rich, limestone soil and constant shade. This lot is made up of Catimor, Caturra and Typical varietals. Cherries are carefully hand picked, sorted and pulped ahead of floating (to remove foreign objects and impurities). The lot is then stored in fermentation tanks for 24-48 hours. Parchment is moved to raised drying beds before being transported to the Railco Processing Station for further processing by a passionate team of women. Manama Farms have inspired neighbouring villages to invest in higher quality coffee production. We are excited to be sharing our very first coffee from Timor-Leste with you. This coffee has been roasted for espresso and filter. Brew however you like for a full-bodied cup that is rich and syrupy.
