Coffee Story: In August of 2022 our team had the pleasure of visiting Colombia and spending time with our dear friend Edward Sandoval on his beautiful farm ‘Cantas Ranas’, which translates to ‘singing frogs’. Edward has a wealth of knowledge and experience, owing to his career as a technical advisor and quality control cupper for Colombia’s national coffee organisation, FNC. When the pandemic hit in 2020, Edward returned to his estate and shifted his focus to improving and updating existing practices and infrastructure. We’re honoured to have been able to experience Edward’s passion firsthand and share this exceptional washed coffee with you.

Cantas Ranas is located in the renowned coffee growing region, Santa Isabel. The farm is 13 hectares in size and sits in the foothills of the active volcano Los Nevados. With staggering elevations of 1,900-2,000masl, rich volcanic soils and cool year round temperatures, coffee grown here matures slowly resulting in more complex flavours. This washed process coffee is 100% Chiroso variety, which Edward favours for its high yield and exquisite cup quality. Ripe cherries are picked by highly skilled locals trained by Edward. Once picked, they are transported to the farms micro-mill where they are depulped and fermented in tanks for up to 96 hours. During this period new pulped cherries are added periodically, reducing the ph levels. This facilitates the extended fermentation period and results in bright, wine-like flavours in the cup. The beans are then washed and carefully dried over 8-15 days on parabolic beds. We’ve roasted this coffee for filter to highlight its delicate florals, vibrant acidity and honey sweetness.

This coffee will be roasted fresh. Red Brick Coffee roasts every Monday and Wednesday and dispatch Tuesday and Thursday.
