Coffee Story: A tabi varietal, washed processed coffee from Paraiso, Colombia. This microlot was produced by Anselmo Trujillo on Finca El Paraiso. Finca El Paraiso is a small farm that has a cool climate, heavy rainfall and sits at an elevation of 1,700-2,000m. This coffee was carefully handpicked in order to use only the ripest cherries. The cherries were then exposed to a dry anaerobic fermentation for 40 hours, before being pulped and vacuum sealed at 20°C for another 40 hours. Finally, the beans were washed and dried on raised beds. This process creates an ideal environment for pushing the limits of fermentation, resulting in a cup that is rich and sweet.
