Coffee Story: Elin Villegas owns a 1 hectare farm planted with 100% Caturra under shade, and is certified organic. At 1850 masl this plot is well placed to produce exceptional coffee.
The processing here is to dry ferment the pulped coffee cherries for 36 hours then wash them 3 times before drying them under cover for up to 30 days.
This outstanding coffee stood out to us because of a fine floral acidity shining above a tangy, juicy base of sweetness and body. This region continues to impress.
