Coffee Story: Grown at an altitude of between 2100-2200masl, this is a classic Yirgacheffe in every way. The cherries slowly ripen to maximum sweetness and it’s processed with quality in mind at very step. Pulped and soaked for 12-24 hours, then washed, the coffee is then dried slowly for 10-20 days.
We have roasted this coffee quite light to highlight the delicate aromatics inherent in these wonderful beans, and have found as time goes on, that the flavours are opening right up as we approach fresh crop arrivals- a phenomenon commonly observed in Ethiopian coffees.
