Coffee Story: Grown by Jairo Arcila at Finca Villarazo, this 100% Castillo lot was picked and transported the same day to La Pradera processing station.
After 24 hours of dry anaerobic fermentation, whole cherries were treated to 60 hours of low temperature (22°C) resting and a further 72 hours at freezing temperatures. Finally, the cherries were dried on raised beds to ideal moisture content before removing the precious beans inside.
