Process: Citrus Sweetness

Coffee Story: The Santuario Project is a quality coffee initiative spanning several countries, with producer and processing expert Camilo Merizalde from Colombia at the core of this project. The Citrus Sweetness process he developed takes over a month to complete and requires two separate anaerobic fermentations. During fermentation the pH is very low to draw out the intense citrus flavours. This coffee comes from lxhuatl6n in Veracruz State on the west of Mexico, and it delivers a vibrant and tangy citrus fruit flavour with a sweet milk chocolate finish.
