Coffee Story: Hailing from Honduras, Cimarron is the name of the family farm where this single origin was grown and processed by the Rodriguez brothers. They are second generation farmers who are passionate about growing and processing amazing coffee.
This single origin was hand picked during the day followed by the de-pulping process. Once de-pulped the fermentation process begins in concrete piles for up to 14 hours. Once the beans have reached optimum fermentation point the coffee is dried at a controlled room temperature of 50 degrees celcius in “guardiolas” for 36 hours. This process helps ensure homogeneous drying, and also helps preserve the quality of the beans.
