Coffee Story: Located near the base of Rego Mountain in Kochere county, producer Abebe Cherfo produces washed coffee from his 5.24 hectare coffee farm which is covered with local landrace coffee varieties called Kurume, 74112 and 74165. Abebe Cherfo joined the Jabanto Group in 2019 and is amongst a very small group of smallholder coffee farmers who produce organic washed coffee. Most producers within the group use the same technique to produce washed coffee, where after scrupulous sorting only the well ripened red cherries remain for pulping using a locally made washed coffee processing machine called Agard. Immediately after pulping, the coffee goes through a fermentation process where mucilage is completely removed before the clean parchment coffee is soaked, then dried under shade while being turned by hand during a 2-4 hour period. The result is a delicious representation of Ethiopian coffee that showcases fertile soil and growing conditions.
