Coffee Story: Midnight is a microlot featuring a new process called the supernatural method from the Konga Mill in Yirgacheffe. Supernatural processing consists of handpicking the ripest cherries and carefully sorting them to remove defects. They are stacked in thick piles to increase temperature whilst being shaded to draw out / control drying and then being turned every few hours for an even fermentation. At day 3 to 5, the piles are thinned out during the day and then stacked and covered in plastic sheeting at night to maintain a consistent temperature. At day 15 to 25 the cherries are spread out like a standard natural to finish the drying process.
The Konga Coop is considered to be one of the most successful cooperatives in the Yirgacheffe region. It runs a washing station located at 1850 masl and the cooperative consists of over 1500 small hold farmers, who grow coffee in the surrounding hills on an average farm size of 1 acre. Due to the size of the farm, and the fact that farmers will grow many other crops amongst the coffee trees, these coffees are called ‘garden coffees’. The region is noted for rich volcanic soils and spectacular coffees, and we have been purchasing from the Konga Coop for many years now.
