Coffee Story: This coffee was grown and processed at Rafael Amaya’s farm La Virginia. The farm is located 18km away from an area called Pitalito, where most of Colombia’s best coffees are produced. The farm is in a town called Timana, which is in the famous Huila region of Colombia. The area has high altitude, stable temperatures, good rainfall and is considered one of the best coffee growing regions in the world.


The coffee cherries are picked when ripe, placed in bags that keep light and air out, and left to ferment for 100 hours. The cherries are then pulped to remove the fruit’s skin and flesh and then left to ferment for another 80 hours in a temperature controlled environment. Once the fermentation steps are complete, the parchment coffee is rinsed cleans and laid out to dry on raised beds.


The extra long fermentation period adds a unique fruitiness to the flavour profile of this coffee. This is a great example of how processing affects the flavour of coffee.
