Coffee Story: This coffee comes from Finca Los Pinos, a farm in the Cauca region of Colombia. Cauca is emerging from a long history of armed conflict and drug smuggling, which have isolated the region. Most coffee in the region is produced by indigenous communities whose members tend to small plots.


The coffee cherries are hand-picked when ripe and lightly fermented by leaving them in loosely-lidded boxes overnight before pulping. Once pulped, the cherries are fermented in water tanks for 16 to 20 hours, and then washed in clean water. The fermented parchment covered coffee is then laid on raised beds inside parabolic dryers, which are like greenhouses that control air flow, and raked frequently to ensure even drying. It takes approximately 10 to 15 days for the parchment coffee to dry to the desired moisture level.


The washed process, including a period of dry and wet fermentation, used for this coffee results in a balanced yet complex flavour profile.
