Coffee Story: This coffee was grown and processed by Maria del Rosario Olaya and her family in Planadas in the Tolima region of Colombia. Tolima is located in the Center-West of Colombia and is surrounded by the Andean mountains. The region boasts excellent conditions for growing coffee, including predictable rainfall, high altitude and volcanic soil. Tolima has remained a less popular region due to the prevalence of armed conflict and drug trafficking. Many farming communities have been caught in the crosshairs of these conflicts. Thankfully in recent times, the region has seen reduced incidents of violence as well as decreased levels of drug production and smuggling. Despite its complicated past, Tolima is Colombia’s third largest coffee producing department.
The coffee cherries at El Diviso are picked when ripe and immediately placed in a sealed container to keep light and air out. The coffee cherries are fermented like this for 35 hours. The cherries are then pulped to remove the fruit’s skin and flesh and then laid out on drying racks inside a parabolic dryer, which is like a greenhouse for drying coffee. The benefit of a parabolic dryer is that the conditions, including temperature and air flow, can be controlled and monitored more closely.
The anaerobic (no air) fermentation period adds a unique and subtle fruitiness to the flavour profile of this coffee.
