Coffee Story: This coffee comes from the town of Buesaco, in the Nariño region of Colombia. Nariño is located in the far South of Colombia, near the Andean Peaks and the border with Ecuador. This region has incredibly high elevations, which have a contrast of warm days and cold nights. This temperature fluctuation enables slow fruit maturation, which is highly desirable for producing high quality coffee. High altitude coffee farming also allows for more natural farming methods without the need for pesticides, as very few pests survive the environmental conditions.
This coffee is made up of a mix of Caturra and Castillo varieties of Arabica. The cherries are hand-picked when ripe, pulped and soaked underwater to enable a slow fermentation period. Once the mucilage has broken down, the parchment coffee is then rinsed with clean water and placed on drying racks inside a parabolic dryer, which is like a greenhouse for drying coffee. The benefit of a parabolic dryer is that the conditions, including temperature and air flow, can be controlled and monitored more closely.
This coffee is outstanding. It is elegant and sweet, which resembles the beautiful terroir of the Nariño region as well as the effort, care and knowledge of the farmer and processor.
