Description: From the first moment we tasted coffee from Wote Konga washing station, we knew we’d found something special. 2018 will be our third year working directly with farmers in the Konga region of Yirgacheffe, something we thought near on impossible a few years ago, due to the complex economic environment that is Ethiopian coffee exporting.
Our in-origin partners, BNT, have helped us to purchase this coffee over the past few years, which is by no means an easy feat. The coffee is purchased during auctions held at the Ethiopian Coffee Exchange. Our partners have to be very vigilant, to make sure they are there on the right day, at the exact right time.
Yirgacheffe is a small sub-region, in the state of Sidama, which is particularly noted for its high quality washed and natural processed coffees. Washing stations are centrally placed in local communities and receive cherry picked by local smallholders throughout November and December. As soon as the coffee cherry is delivered, it is immediately pulped and laid out to dry on raised drying tables. Drying typically takes for 20/30 days, which allows time for the beans moisture content, to drop down to an optimum 12%. Throughout this drying period, teams of skilled workers hand sort for defects and continually turn the coffee ensuring that an even drying takes place.
